Orange Pecans

Put 2 cups sugar and % cup fresh orange juice (frozen concentrate can be used) in large sauce pan. Cook rather rapidly until reaches soft ball stage. Remove from heat. Add 3 tablespoons grated orange rind and 3 cups pecans (halves) and a pinch of salt (V4 teaspoon). Stir with wooden spoon (as fast as possible) until mixture turns cream color (about 10 minutes). Pour on cookie sheet. When cool enough to handle, break apart. Yields about 1 pound.

Castleton, Va. 1st Layer 2 pkgs. lime jello made as directed. Chill; set till very firm. 2nd Layer Dissolve 1 pkg. lemon jello and 1 cup boiling water. Add lA cup small marshmallows. Put over low heat till melted. Remove and cool. Add 1 cup pineapple juice from a No. 2‘/j can of crushed pineapple. Add one 3 oz. pkg. cream cheese. Beat till as smooth as cream; add drained, crushed pineapple and 1 c. (slightly less) mayonnaise. Whip separately Vi pint whipping cream till stiff. Fold into lemon mixture. Let stand till completely cooled. Pour over lime jello. Return to refrigerator until very firm. 3rd Layer 2 packages cherry jello made as directed. Cool. Pour over the rest. Refrigerate 1224 hours before serving.
