Recipe
Back home in the Philippines, Victor’s quite a whiz around the kitchen, thanks to a mother who believes in teaching her sons to be self-sufficient. He’s delighted the Helmers with his culinary creations and agreed to share a favorite recipe with the Rappahannock News.
Adobo
1 lb. pork or chicken cut into one-inch cubes (small chicken parts, such as wings or thigs may also be used)
V* cup vinegar
3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper.
1 tablespoon salt
Soak the meat in a mixture of the vinegar, garlic, pepper, salt and soy sauce for at least 30 minutes. Bring to the boiling point and simmer over low heat until the meat is tender and browned in its own fat, usually about 30 to 45 minutes.
