pressure canner.

A pressure canner is a heavy kettle with a tight-fitting lid that can be clamped or locked down to make the kettle steam-tight. This raises the temperature inside above that of boiling water, killing harmful microorganisms and preventing deadly botulism.

A pressure canner will also shorten the amount of time it takes to can foods.

A pressure canner is not the same as a pressure cooker. A pressure canner has a gauge to measure pressure, a safety valve, a rack or wire basket to hold jars off the bottom of the canner and some sort of gasket around the lid to keep steam from leaking out.

Those who already have a pressure canner with a dial gauge should have it checked for accuracy before the canning season begins.

Using a pressure canner with an inaccurate pressure gauge runs the risk of food spoilage and poisoning.
