Chop vegetables and add a handful of salt. Put in clean pillowcase and hang on tree limb for one or two hours.
Pour out in large container, add 10 cups sugar. Boil 1/2 box pickling spice in two cups of vinegar. Boil vinegarspice mixture 10 minutes at hard boil. Strain and add to vegetables with eight more cups vinegar. Boil mixture five minutes, pack in sterilized, hot jars. Process jars to seal.

Commeal Muffins: 1/2 cup shortening 1/2 cup sugar 11/2 cups commeal 11/2 cups flour 2 eggs ltspsalt 1 tsp baking powder 1 tsp soda 1 cup sour milk or buttermilk
Cream sugar and shortening, add eggs, and beat until smooth. Add dry ingredients alternately with milk. Pour into muffin tins and bake 30 minutes at 350. Makes 18 muffins.

String Beans 91/2 quarts broken green beans 1/2 cup salt 1/2 cup sugar 1 cup vinegar
Put ingredients in large pot, cover with water and boil 20 minutes. Pack in hot, sterilized jars and seal. To cook, dram off liquid, replace with fresh water and cook to taste.
