Cheese, a food made from milk, dates to about 4000 B.C. What produces the distinctive character of various cheeses? It depends on the kind of milk used, the amount of fat in the milk, coagulation methods, cutting, cooking, forming the curd, types of culture, salting and ripening.

Storing cheese
