One of the most welcome signs of spimg is the abundance of fresh asparagus in our gardens and local markets.

When shopping for asparagus, select firm, tall stalks with tightly closed tips. There should be just a light brushing of lavender ont he rich green of the vegetable. Plump spears are ideal for entrees and casseroles, while the slender ones are best for appetizers and salads. After you pick asparagus or bring it home from the market, wrap the cut ends in moist paper towels and store in a plastic bag in the refrigerator.

Asparagus is usually reserved for special meals because it is usually an expensive vegetable unless you have your own. Asparagus plants take two or more years of care before they product harvestable spears, and they require lots of hand labor during planting, growing, and gathering.
