Vinaigrette Dressing 2 tablespoons lemon juice 2 tablespoon red wine vinegar 4 tablespoon olive oil i 2 tablespoon vegetable oil 1 teaspoon salt ) 1/2 teaspoon sugar 2 teaspoons Dijon mustard Pepper to taste Cut asparagus into 3-inch pieces and boil slowly for 5 to 7 minutes in salted water until tender. Drain and cool. Combine dressing ingredients, and marinate asparagus in dressing for 1 hour at room temperature. Serve on a bed of lettuce. Serves 8 to 10. Be careful not to overcook asparagus!
Mushroom and Asparagus Curried Salad 2 cups asparagus, cut into 1 1/2inch pieces 1/4 pound fresh mushroon caps, sliced 3/4 cup Hellan’s mayonnaise ( 3 tablespoon sour cream 11/2 teaspoons curry powder 1 teaspoon grated onion 1/2 teaspoon sugar 3/4 teaspoon lemon juice1 Salt and pepper Lettuce . Fresh parsley Cook and chill asparagus. Mix remaining ingredients and combine with mushrooms and asparagus. Add salt and pepper to taste. Put in bed of lettuce and top with fresh parsley. Preparation: 15 minutes. Serves 4. A must for curry fans! Asparagus Parmigiano. A year round favorite.
