I got my first peaches of the season from a local orchard this week. They were a white-fleshed peach. Other varieties should be ready soon.
When picking peaches, look for a creamy yellow to gold back-ground color at the stem end which indicates eating quality fruit. Since the red blush on peaches will vary by variety, remember to look for that creamy back-ground color.
How Many Peaches?
When estimating how many peaches to pick or purchase, remember that one bushel equals 48 pounds or 18-24 quarts. One pound of peaches equals two medium-size peaches, 2 cups sliced peaches or 1 cup pulp. Eight medium peaches equals approximately 5 cups sliced, enough for one pie.
