Freeze. Peach Pie Easy Yields: 1 pie 1 unbaked pie shell 3 to 4 peaches (or equivalent frozen peach halves), peeled and halved 1 cup sugar 2-1/2 tablespoons flour 2 eggs juice of 1 lemon 1/2 teaspoon vanilla 4 tablespoons butter whipped cream Line uncooked pie shell With peach halves. Mix all ingredients (except butter) and pour over pie.. Dot with butter. Bake 325 degree for 1 hour or until set. Serve with whipped cream. Note: freeze peach halves on cookid sheet, then place in baggies to use all winter. Peach Spread Or Dip 1 fresh, Georgia peach, peeled and cut-up 1 3-ounce package cream cheese, softened 1 tablespoon mayonnaise 1 rib celery, finely chopped 3 crops almond extract Mash peach thoroughly. Add cream cheese and mayonnaise and mix well. Add chopped celery and almond extract; stir until blended. The spread may be used on white or wheat bread slices as a sandwich filling or it may be served as a dip with crackers.
