For a while he had a bread business, "Chaz's Breads,” offering 12 breads which he sold at local stores. At the Blue Moon Cafe, he still does some breadmaking and makes the round Sicilian bread for the muffaletta, which is a New Orleans sandwich stuffed with Olive salad (imported from New Orleans), salami, turkey, ham, provolone cheese and olive oil dressing.

The menu is varied and should prove to have something to satisfy anyone's appetite. Chef Chaz Greene's eclectic menu shows off his talents for creating ethnic dishes, along with some American classics.

Appetizers range from white pizza (romano, provolone and mozzarella with fresh herbs on a sourdough crust) to onion tart, to roasted red pepper hummus.

Garlic soup and all other soups are made using stocks made from scratch, said Chef Greene. Garlic soup is almost sure to chase away a cold, and the chicken and dumplin' soup is a slightly spicy soup loaded with pieces of chicken. Several salads are available, and the chef is especially proud of the brown rice and green bean salad.

Other sandwiches are available besides the muffaletta, including the Blue Moon burger with choice of toppings, and a Garden Burger, totally vegetarian.

The entrees, which are served after 5 p.m., range from a Grilled Ribeye to Fettucini and Grilled Shrimp, to a Roasted Greek Chicken served with fresh pasta of the day.

Some desserts are housemade, and one comes from a local baker. The Old Rag Pie, with chocolate chips, bourbon and walnuts, sounds especially appetizing.
