Basil is an annual herb native to India, and is essential to Italian cooking. As many as 50 to 60 species of basil are known. Basil grows readily from seed, and the first cuttings of leaves are available just six weeks after germination. The main stem is very stiff, and the plant is extensively branched as it continues to grow throughout the season.
The pointed and slightly serrated leaves look as though they had been folded along the central vein, so that the two halves of each leaf face one another. Some varieties are largeleafed while others have very small leaves; these may be a slightly yellow-green, or a deep purple.
The plants begin to flower in late July and continue producing many whorls one above another at the tips of the branches throughout the remainder of the season.
