Thyme is a handsome plant, frequently used for edging garden walks. The plant is native to southern Europe, and will die back somewhat in winter in this area. However, it usually comes out again in early spring.
It is a dainty subshrub growing to only six inches high, and is a favorite of the honeybee. Very small rosy pink flowers appear in spikes at the tips of branches in May, and again in mid-summer if the plant is cut back after the first bloom. The leaves are very small, wider at the base than at the tip, and grayish-green.
Common thyme grows readily from seed; however, some of the variegated and horticultural varieties should be propagated from cuttings. - -
Thyme is a must for New England clam chowder; it is used extensively with other herbs in flavoring roasts and chops.
