CURRIED VEGETABLES 1 onion, chopped 2 tablespoons oil 1 small head cauliflower (broken up) 1 medium eggplant (chopped to 1 ” cubes) 1 green pepper, chopped 4 medium carrots, sliced 'A lb. string beans 1 tsp. chili powder 1 tsp. cumin V* tsp. tumeric 'A tsp. cardamon 1 bay leaf 1 cup tomato juice.
