When choosing peaches, please do not squeeze the fruit to test for ripeness. Peaches require delicate handling because they bruise easily and deteriorate rapidly. Color and aroma are the best tests for ripeness, says Ms. Wiley. Ripe peaches are very fragrant and the background skin color between the blush is creamy yellow. Ripe peaches should be stored in the refrigerator to slow the ripening process. But peaches are the most flavorful if served at room temperature.
