warm, add dissolved yeast. Stir in 4 more cups of whole-wheat flour.
Turn out onto floured board and knead (using approximately 1 cup more of whole-wheat flour) until a workable dough is formed.
Place in oiled bowl, cover with a damp cloth and let rise in a warm place until double in bulk (about 1 hour).
Stir dough down and let rise again (about 1/2 hour). Form into 2 loaves. Place in oiled bread pans, 9x5x3-inch, and let rise to top of pan (about 1/2 hour). Meanwhile, preheat oven to 325 degrees.
Bake in preheated oven for an hour. Turn out of pans. If sides of loaf are not crusty, set in oven on rack without pan for another 10 minutes to dry out a little. Cool before slicing. Store in refrigerator. Yield: 2 loaves.
