As a complex carbohydrate food, one of those desirable foods -that releases energy slowly. It has a good distribution of essential amino acids to help provide protein, B vitamins and iron. Most commercially made pastas are enriched with fortified vitamins.
Homemade pasta is addicting. Once enjoyed, it’s hard to go back to the storemade variety.
Homemade pasta
Makes 4 servings as main dish; 6 to 8 as side dish or first course.
13/4 cups all-purpose flour
1 tsp. salt
1 egg 9 6 egg yolks
In food processor fitted with steel knife or mixer bowl, combine 1 1/2 cups flour, salt, whole egg and yolks. Process or mix until blended and dough forms ball. Dough should not be too wet. Add remaining flour, if necessary, 1 tablespoon at a time, mixing until smooth.
Divide dough into 4 balls. Wrap 3 balls in towel to prevent drying.
