Noodles are flat, ribbonlike forms, sometimes curled on one or both edges and available in varying widths. Noodles contain eggs in addition to wheat flour and water. Lasagna, linguine, and fettuccine are classics.
Macaroni is cylindrical, hollow pasta that is available long or short, smooth or ridged, and curved or straight. Rigatoni, ziti, rotelle, manicott, and elbows are listed in this category.
Specialty products include shells, pastina, bow ties, alphabets, fans, and wheels. The addition of special ingredients, such as spinach or tomato, gives color to some pasta.
Variety products, such as ravioli and tortellini that are filled with meat, cheese, or other ingedients, are also readily available.
Storing
Low-moisture content enables uncooked packages pasta to have a long shelf life. Store pasta in a cool, dry place free from dust and moisture for up to one year; store egg noodles for up to six months.
Cooked pasta can be stored in the refrigerator up to four days or in the freezer up to one month. Refrigerate pasta dishes one to two days, or freeze them for up to six months.
