One of the favorite and most delicious vegetables of spring is fresh asparagus. Asparagus starts to appear in the grocery stores around the end of February and is available through the summer months. The peak months are April and May for asparagus in local gardens. Most of the asparagus that is available in the grocery stores, local vegetable stands, and pick-your-own farms is green asparagus, although some of the fancier grocery stores will sometimes have the white asparagus.
Selection
When selecting fresh asparagus, choose straight, bright green stalks of uniform size with tight tips and moist bases. When figuring howT much to buy, allow 8-10 stalks - about 1/2 pound - per person. Bundles usually average 2 to 2-1/2 pounds, containing 3-4 dozen stalks.
