Peach Yogurt Pie 16 graham crackers (each 2 1/2 inches square), crushed, about 1 cup 1/4 cup brart flake, crushed 3 tablespoons and 1 teaspoon margarine, melted 1/4 teaspoon ground cinnamon 1 envelope unflavored gelatin 2/3 cup unsweetened apple juice 3 cups unsweetened peaches, divided

11/2 cups plain low-fat yogurt 1/2 cup sugar 1 teaspoon vanilla extract 1/4 teaspoon ground nutmeg Preheat oven to 350 degrees F. In small bowl, combine graham cracker and bran flake crumbs, margarine and cinnamon; spoon into flinch pie plate, pressing down firmly. Bake 8 to 10 minutes or until brown. Cool on wire rack. In small saucepan, sprinkle gelatin over apple juice; seba#Me 5 minutes or until gelatin softens, over low heat, cook, stirring constantly, 5 minutes or until gelatin dissolves; pour into large bowl. In blender or food processor, puree 2 cups peaches; stir in gelatin. Add to bowl with yogurt, sugar, vanilla and nutmeg; stir until smooth. „ Cover and refrigerate 40 minutes or until mixture mounds when dropped from a spoon. Coarsely chop remaining peaches; fold into gelatin mixture. Spoon into pie crust and refrigerate until firm. Makes 8 servings.
