2 eggs, beaten
1/2 cup milk
1 package sloppy joe mix
Mashed potatoes
1 teaspoon onion powder
1/2 cup shredded Cheddar cheese
Combine croutons, eggs, milk, and sloppy joe mix; let set for 5 minutes so croutons can absorb liquid. Add in ground beef. Place meat mixtures in 9 to 10-inch pie plate. Spread mixture in pie plate as you would for a pie crust. Build meat crust up sides above pie dish as there will be some shrinkage. Bake uncovered at 350 degrees for 45 minutes. Drain. Meanwhile, prepare mashed potatoes (5 medium to large potatoes) or use instant packaged potatoes (6 servings). Add onion powder to potatoes. Place potatoes in meat shell and sprinkle cheese on top. Bake until cheese is melted, 2 to 4 minutes. Serves 6.
Potato Burger Pie
1 pound lean ground beef
1/2 cup plain dry bread crumbs
1 egg, beaten
1/2 cup barbecue sauce
1/S teaspoon pepper
4 cups frozen hash browns potatoes
1/2 cup chopped onion
1 (2 1/2 ounce) jar sliced mushrooms, drained
2 cups shredded Cheddar cheese
Combine meat, crumbs, egg, barbecue sauce and pepper; press on bottom and side to rim of 9-inch pie plate. Combine potatoes, onion, mushrooms and 1/2 cup cheese; spoon over meat. Cover; bake at 350 degrees for 45 minutes. Pour off fat. Top with remaining 1 1/2 cups cheese; bake 5 minutes longer or until cheese is melted. Garnish as desired. Refrigerate leftovers. Makes one 9inch pie.
