Many states, including Virginia, license cider producers and inspect production facilities. The industry support strict licensing procedures, good manufacturing processes that include washing and brushing the apples used, testing of ingredients and products as necessary, and regular inspection of cider mills to ensure public confidence that the operations are safe.
The International Apple Institute, the national trade association for apple growers, packers, shippers and processors, encourages cider manufacturers to follow good manufacturing practices, especially washing and brushing of apples. State apple associations also regularly sponsor seminars on safe production practices.

Fresh cider should be refrigerated.
Consumers may be interested to know that pasteurized (heat-treated) and vacuum-packed apple juice is shelf stable and requires no refrigeration until opened.
Many cider producers and consumers believe that pasteurization alters cider's fresh, unique taste. So if you're a purist and want that unique, fresh taste you need to purchase the fresh or "raw" cider.
Cider can be frozen. Simply pour out about 1/2 cup to allow for expansion when the juice freezes solid. Replace cap on plastic jug and freeze. When ready to use defrost and shake well before serving.
Cooking With cider
Most folks would agree that the best way to.enjoy cider is'as a beverage — served either cold or hot. Mulled cider is a favorite as the weather turns crisp. Cider can also be used to flavor foods, as the following recipes illustrate.
