EGGPLANT
Eggplant belongs to the potato family. It is a colorful, beautiful vegetable. Choose an eggplant that is heavy for its size, with fresh, shining skin. It is available all year, but best during the late summer and early fall.
There are many different and delightful ways to prepare eggplant. TrUfe stuffing them, baking themw with tomatoes and cheese or the many Mediterranean recipes such as moussaka.

1 oarge eggplant cut in V»" slices
3 eggs beaten
Vi C. bread crumbs
Dip each slice in egg, then in bread crumbs and fry in oil.
1 small can Old El Paso "Chopped Tomatoes & Green Chilies” (may substitute 4 oz. tomato sauce or several chopped tomatoes)
