In coming to) Sian, the capital of Shensi province, we have entered a distinctly different climatic zone from that of Peking and Taiyuan where we traveled during our first week in China. Apple, peach and other fruit trees are blooming; the winter wheat growing among the trees is well up and the peasants (a term used by the Chinese) are setting out vegetable plants raised under improvised green houses. Irrigation systems are gushing water into ditches and across fields.
Having traveled more than 500 miles across China, half by train and half by air, I think it’s remarkable that probably all of the agriculture we have seen depends on irrigation at one time or another. Every piece of land has been worked, 'virtually sculptured. For
