Nature’s Cafe is the home of "Sorry Charlie.” a super tuna fish salad stuffed generously into pita bread with sprouts and fresh garden lettuce and "Five Easy Pieces." a combo that includes renowned carrots, freshly grated, from Nature’s Foods, cheese, sprouts, lettuce and a superb house dressing.
When fresh asparagus was in season. Rae steamed it. chopped it and mixed it with ground almonds. then sauteed it in butter for a unique hamburgerless burger. This week, she experimented with sauted fresh mushrooms loaded into pita bread with tomatoes, more sprouts and lettuce—an unqualified success.
Working with her assitant in the kitchen. Kaye Jurnak, Rae surprises her regular lunchtime customers with desserts that are as nutritious as they are delicious. Cheesecake usually lasts only through the first shift, so diners who hit the lunch counter at 1 p.m. must usually settle for yogurt and fruit—hardly a second-class substitute since the fruit tastes fresh from the tree, sprinkled generously with nuts.
And at Nature’s Cafe, there’s no grease hanging in the air outliving its welcome after the french fries have disappeared. All of Rae’s sandwiches are served instead with crispy health food chips. In place of the soda fountain Cokes and sodas, she offers sun-brewed red zinger punch with honey and ice cold apple cider, a tribute to Rappahannock's favorite "industry.”
The remodeled showroom lends itself perfectly to a cafe. With a flair for interior decorating, Rae has made the most of the setting. Graceful houseplants frame the sides of a huge picture window that brings Washington Square almost into the dining

Robert Grehan, currently studying at the Juilliard Conservatory of Music in New York City, has been accepted to the Program in Conducting. In competition with more than 80 international applicants, Robert was one of the three students chosen for the highly selective program. Robert, a 1977 graduate of Fauquier High School, is the son of Mr. and Mrs. James Grehan of Amissville.
