Turkey Noodle Soup

Bring the turkey back, neck, etc. to a boil in a large dutch oven, pressure cooker, or crock pot filled with water and simmer covered for several hours—until the meat can be picked from the frame and the bones discarded.
Add V-i cup chopped celery with its leaves, one chopped onion, 1 bay leaf, and season to taste.
A portion of this can be cooked with noodles to serve for a light Thanksgiving night supper. The rest can be cooked down into soup stock which can be frozen in individual packets for stews, soups and gravy during the winter. Other meat and vegetables may later be added for a variety of hearty soups.
