Saturday Turkey Souffle

Combine 2 cups diced leftover turkey with 'A chopped green pepper, 'A cup chopped celery, 'A cup mayonnaise, salt and pepper.

Cube two slices of bread and lay in the bottom of a casserole dish. Spoon the turkey mixture over the top. Add another two slices of bread, cubed. Beat two eggs then combine with one cup of milk and one can of cream of mushroom soup. Pour over the top of the second layer of bread.

This may be set in the refrigerator, covered, for an hour or overnight to let the liquids set—or it may be immediately baked—at 325 degrees for an hour. Serve this also topped with shredded cheddar cheese.
