Sweet “P” Cookies 3 c. butter 3 c. sugar 8 c. cooked sweet potatoes (drained) 3 eggs IT. vanilla 6 c. all-purpose flour 1T. baiting powder 1T. cinnamon IT. baking soda 1 tsp. salt lVfetsp. nutmeg 2 tsp. allspice lVz-2 c. raisins 1V4 c. nuts Cream well together butter, sugar, sweet potatoes, eggs, and vanilla. Stir together flour, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt. Add to batter and mix well. Stir in raisins and nuts. Drop by teaspoonful onto well greased pan. Bake at 350 degrees Fahrenheit for 12-15 minutes. Frost with glaze of lemon juice and confectioner’s sugar, if desired. Do not stack these cookies; they will stick together.
