suggests: Chinese Chicken Salad Ingredients: 1 boned chicken breast per serving white wine 1/3 cup olive oil 1/3 cup lemon juice 1/3 cup soy sauce Vi" piece of ginger cut in fine Julienne Sherry to taste 2 generous squirts (about 1 tbsp.) of sesame oil scallions walnuts sweet red pepper snow peas or lettuce Preparation: Poach chicken breasts in equal amounts of white wine and water. Slice and present on decorative lettuce or lightly steamed (until they're bright green) snow peas. For the sauce, combine the olive oil, soy sauce, ginger, sherry, sesame oil and pour over chicken. Slice scallions (including the green parts) and cut the pepper into thin matchsticks. Decorate chicken. Mrs. Moore notes that for the best taste, the sauce should be made three days in advance. Serves six.
