Large cooked artichokes may be cut in half and stuffed with food or hot chicken salad. Artichokes are also a delicious addition to many combination dishes.

Preparation is very simple. Wash artichokes in cold water and cut the stems close to their bases. Remove any small, loose, or discolored leaves at the bottom. Trim about an inch from the top of the artichoke and, if desired, you can snip the thorny tips, but this isn’t necessary. Rub any cut surfaces with fresh lemon or lime juice to prevent darkening.
