Gourmet meat roll 2 eggs, beaten 1/2 c. tomato juice 2 Tbsp. chopped parsley 1/2 tsp. salt 2 lbs. ground beef 1 1/2 c. shredded mozzarella cheese 3/4 c. soft bread crumbs 1/4 c. sherry 1 small clove garlic, chopped 1/4 tsp. pepper 8 thin slices boiled ham 3 slices mozzarella cheese, halved diagonally Combine eggs, bread crumbs, tomato juice, sherry, parsley garlic, salt and pepper. Stir in ground beef, mixing well. On foil or waxed paper, pat meat into a 12x 10-inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Sprinkle shredded cheese over ham. Starting from short end, roll up meat, using foil to lift. Seal edges and ends. Place roll seamside-down on a rack in a 13x9x2-inch pan. Bake in a 350-degree oven for 1 hour and 15 minutes. Place cheese wedges over top of roll, return to oven for 5 minutes until cheese melts. Serves 8. Sesame beef strips 1 pound beef flank steak 1/4 cup toasted sesame seeds 3 Tbsp. flour 3/4 tsp. each ground coriander, ginger and chili powder 1 cup beef broth 3 Tbsp. vegetable oil 2 cups hot cooked rice, if desired 4 Slice beef thinly across the grain. In shallow bowl, mix sesame seeds, flour and spices. Dip beef strips into broth; then toss in flour mixture: Heat oil in wok or non-stick surface skillet until hot; add beef. Cook; stirring constantly, about 2 minutes. If necessary, add a little beef broth to keep beef from sticking to bottom of pan. When beef is cooked, add remaining broth. Cook, stirring constantly, until thickened and heated through. Serve over rice.
