and formation of a proper vacuum seal. Food forced into the sealing surface while expanding, or undergoing rapid pressure drops, can break the seal. Make sure the rim of the jar, lid and ring are immaculately clean before placing lid on jar and processing.

• Test lids. Always perform this test to check seal. Press down on center of lid; if it stays down, you have a good seal. If not, it can be reprocessed, only if within 24 hours of original processing. Remove contents and prepare as if fresh. Examine jar for cracks or nicks. Use a new lid. Process for original processing time and method. This may cause some loss of quality. Otherwise, refrigerate and eat within a few days. If more than 24 hours since original processing, you must throw the whole thing out.

The following recipe for Mexican Com Relish is a delicious one that Doris Donald of Castleton gave me last fall and I saved for this year’s food preservation season.

The second recipe is for Reduced-Sodium Sliced Sweet Pickles. It uses less salt and more spices than a traditional sweet pickle recipe.
