Chefs from The Inn at Little Washington joined chefs from 79 other Washington, D.C. area restaurants at the Chefs’ Best Dinner on June 2.
The dinner was a fund-raiser for Food and Friends, a Washington, D.C. based AIDS service organization which delivers meals to homebound people with HIV/AIDS in Washington, D.C., Maryland and Virginia, as far away as Fredericksburg.
Tickets for the dinner are available to the public for $160 a person, and 1500 guests were expected to attend the event at the Washington Hilton. The chefs and their respective restaurants donated their food and time to help raise the funds. Chefs from The Inn are travelling the greatest distance to participate in the fund-raiser.
Because Chef Patrick O’Connell had a prior commitment, Sous Chef Bob Whitehead, Cook Keith Nocco and wait staff James Brown prepared and served the food from The Inn at the dinner. Each restaurant was asked to provide tasting size portions enough for 500 to 600 people. The Inn took a dozen whole salmon, each weighing 12 to 14 pounds. The salmon was grilled with a mustard crust and served cold with a sauce vert (herb mayonnaise), wild rice salad and pickled cabbage slaw. (The recipe for the salmon can be found in Chef O’Connell’s cookbook which was released last fall.)
This is the second year The Inn has helped with the fund-raiser. Last year Mr. Whitehead did the dinner along with Chef O’Connell and Sous Chef Jeff Waite. .
