Strawberry shortcake is a wonderful dessert. The easy way out is to use a pound cake, cool whip, strawberries, and mint leaves for garnish, however, many cooks have wonderful shortcake recipes that are simple and delicious.

Although strawberries are generally used, other fruits such as raspberries, blackberries, peaches or even canned, fruit, can be substituted and makes delicious short cakes. This is the recipe that I use.

Old Fashioned Shortcake

2 cups flour

1/2 teaspoon salt

2 tablespoons sugar

4 teaspoons baking powder „ 3 tablespoons shortening

3/4 cup milk

1 quart berries

Sift dry ingredients, mix in shortening, add milk to make soft dough, smooth out lightly. Bake in greased deep layer cake tin in hot oven, 375 to 400 degrees for 20 to 25 minutes. Split, butter if desired and spread sweetened crushed berries or other fruit between layers.

Even though I always use the above recipe, when I think of strawberry shortcake, I recall when the Heddleston family moved to Rappahannock and we were all together for dinner one evening and April fixed the best strawberry shortcake I had ever had and must admit the best to date. I contacted her and she was happy to share her recipe.

Strawberry Shortcake

1 quart of strawberries, sliced

1 cup of sugar

1/3 cup shortening

2 cups all purpose flour
