When purchasing, look for berries that are firm and plump. The color ranges from bright to dark red, depending on variety. The most common varieties seen in stores are medium to large and are very bright in color.

Cranberries have good keeping records. Fresh, they will keep in the refrigerator for up to four weeks. Frozen, they will keep up to one year.

To prepare cranberries, just wash and pick over berries. Frozen berries grind easily and may be left frozen.

These tiny red berries are not just used in sauce. They are excellent in bread, relishes, chutney, desserts and can be cooked with vegetables.
