favorite suppliers is the Whipple farm. They are devoted to heirloom vegetables, and have a “bio-dynamic” style. Biodynamic is a term of art for foods and methods which strive toward the organic, using as few chemicals as possible, but which are not certified organic. It’s a statement of philosophy and an advertisement of their methods.
“All their produce is heirloom. Sicilian zucchini, six varieties of eggplant, wonderful cucumbers. You order, they pick it and bring it.” It stays fresh on the vine and branch until the last moment- not stored, so it’s as fresh as is humanly possible.' Maragos also gets what he can from the farmer’s markets in Culpeper and Charlottesville.
Two Fotis, two eras
The name “Foti’s” has two meanings. Foti is a nickname for the greek name “Foteos”. It is Maragos’ middle name. But the name is meant as a tribute to an older Foti as well. Bom and raised within the small, close knit Greek community in Minot, North Dakota, Maragos comes from a long culinary line. Maragos’ father was a butcher and ran the dining room of the family restaurant in Minot. On the wall in the dining room are two photos in one frame. They are crystal clear black and white photos that could have been taken yesterday. But they are from 74 years ago, in 1931.
