On butchering day, the first task was for someone, usually my father, to get up at O-dark-thirty and light the fire that we had laid the previous day under the scalding vat. This was so the water would be hot at first light. It was going to be a long, hard day of work, and you wanted the first hog in the vat as soon as it was light enough to see what you were doing.
Granddaddy’s jobs
■Granddaddy had two specific jobs at our hog killings. His first job was to shoot the hogs. This was done with his own, small .22 rifle, using the smallest .22 short bullet, and placing the shot just so, between the eyes, such that the hog would be stunned, but not killed, and the next step could be performed by three or four strong men without getting hurt.
