The gambrels were pushed in between the exposed tendons and the bone, and the hog was hung up on the meat pole. This was another effort that required several strong men. As I said, this was hard work.

There, the hog was washed down, again, and, if there was any hair left on the hog, it was shaved off with a sharp knife. Then, Granddaddy did the second job that he was there for he opened the hog.
He used his own butcher knife, that he had sharpened, and he wanted a clean tub at the ready. He also required clean rags and he wanted clean strips of white cloth, to tie off certain things and parts, shall we say. Granddaddy was meticulous.
