Dutch word for butterfly (boterschijte) gives some credence to that theory. Another theory is that the word came from the brimstone butterfly, which is the most common butterfly in England and is the color of butter.
For those of us looking for more romance in our entymology, we can also consider the Medieval myth (as recorded in folktales of the time) that witches and fairies would fly and steal butter at night—in the form of butterflies.
