With turkey days upon us, many local cooks are faced with the prospect of many meals with the same central ingredient. Luckily, turkey is adaptable, and left over cooked turkey can be used in

many different ways. After spending many hours in the kitchen on Thanksgiving, most of us are ready to coast for a while anyway. We’ve tried to find some recipes using not only turkey, but other Thanksgiving leftovers in simple, nourishing dishes.

Turkey Soup is a mainstay of post-holiday cooks. After removing most of the available meat from the bones, place the turkey carcass in a large pot and cover with water. Add carrots and onions for flavor and simmer slowly for several hours. Remove bones and vegetables and strain. The turkey broth, when seasoned with a little salt and pepper.
