Those with leftover turkey, ham and rice can make Jambalya, a dish made in the early colonies and still good.
Jambalya
1 cup chopped country ham
l'/j cups stock
3 cups chopped cooked turkey
2 cups cooked rice
‘/j quart jar of tomatoes
1 onion, chopped
Melt lard, butter or other shortening in pan, brown a cut up onion in this, add a spoonful of flour to brown and the tomatoes. Add meat and season with salt, pepper and paprika.
Pour in turkey stock, add rice, and cook until done.
