Onions combine well with so many things, but one of the best is cheese. The onion cheese pie is not the custardy quiche-type. It is shallow, not a deep-dish pie, and is good as a main course, or cut into very slender wedges and offered as a* hors d’oeuvre.
Onion Cheese Pie j
Serves 6 J
1 unbaked 9-inch pastry shej, homemade or frozen i
2 tablespoons butter or margarine •
2 tablesponns olive oil |
4 cups chopped sweet Spanish onion (about 2 large) J
1/2 teaspoon salt J
1/4 teaspoon pepper j
2 cups grated Swiss cheese I
2 or 3 flat anchovy filets, chopped
2 tablespoons grated Parmesafri cheese \
2 tablespoons finely chopped parsley •
This is a shallow pie, so press edge of pastry down into pie platSe before baking, to resemble a pizz4. Bake in a preheated 425-degree oveji 15 minutes or until lightly browned. Remove from oven.
In a large, heavy skillet, heat butter and oil; add chopped oniop and saute until soft and translucent Stir in salt and pepper. ;
In baked pastry shell, arrange half of grated Swiss cheese. Top with half of onion and repeat 2 morp layers. Sprinkle with anchovy piecefe and grated Parmesan cheese. Bakje in a preheated 350-degree oven 2t) minutes or until golden. Sprinkle with parsley and serve at once, of cool to room temperature. Cut into 6 main course servings, or into 12 appetizer wedges.
