Although the degree of doneness is a matter of personal preference, the following internal temperatures as checked by a meat thermometer are suggested: rare — 140-150 degrees; medium — 160-165 degrees; well done —170-180 degrees.

The best time to season lamb depends on the method of cooking. Roasts are most often seasoned before cooking for this gives the seasoiiings a chance to penetrate at the least part way into the meat. However, it is usually considered best to season chops and steaks after browning.

What is the fell?

The fell is the thin paper like cowering found over the fat of all lamb. If it has not been removed from chops in the market, this should be done. However, leave it on the leg for it will hold its shape better and be juicier with the fell left on.

Serving lamb

Lamb should always be served piping hot or cold, but never lukewarm. Roasts should have a chance to “set” a short while, about 15 minutes, to give the meat a chance to firm up and make carving easier. Serve all other lamb immediately.
