me iamD in i-incn squares and dredge with 4 tablespoons flour. Heat oil in a large skillet. Add the lamb and cook until brown. Placse rice in a casserole and cover with lamb and onion. Place remaining flour in the skillet and cook until brown. Add the water and seasonings and blend well. Pour over lamb mixture and cover. Bake at 375 degrees for 2 hours, adding more water if necessary. ] Easy Lamb Curry 1 tablespoon oil ! 3 tablespoons chopped onion ’ 1 cup diced celery 1 tablespoon flour > 1 teaspoon curry powder 2 cups beef broth 1/4 cup catsup 2 cups diced cooked lamb 1/2 cup chopped apple (unpeeled if color is good and skin is crisp) In a skillet, saute the onions and celery lightly in the oil. Stir in flour mixed with curry powder. Blend until smooth. Add broth and catsup. Simmer about 1 hour, stirring occasionally. Add the cooked lamb and the chopped apple. Simmer another 20 minutes. Serve over rice. Yield: 4 servings. Approx, cal/serv.: 325 (or 425 with 1/2 cup rice).
