Peanut Growers. They are made much like Cheese Straws, but the use of peanut butter and peanut oil in the pastry makes it easier to mix and roll. The baked sticks or the unbaked pastry can be frozen for future use.
The remaining recipes are from some very good cooks in Rappahannock County.
Peanut Pick-up Sticks
2/3 cup crunchy peanut butter
1/4 cup peanut oil
2 eggs
1-1/2 teaspoons salt
1 cup flour (about)
Paprika
Blend peanut butter, peanut oil, eggs, and salt until smooth. Stir in enough flour to make a dough which can be handled or rolled. Roll out on lightly floured board or pastry cloth to about 1/4-inch thickness. Sprinkle with paprika. Cut with sharp knife
into sticks about 1/4-inch wide and 4inches long. With a spatula, transfer carefully to baking sheet. Bake at 400 degrees for 7 to 10 minutes. Cool on baking sheet before removing. Makes about four dozen sticks.
