3 large potatoes, diced 1 large onion, diced Vegetable oil 3 medium zucchini, halved and sliced Salt and pepper 11/2 cups shredded Swiss cheese 2 cups milk 9 eggs 1 tap. prepared mustard 1/2 tsp. salt 2 tsp. Worcestershire sauce Minced parsley or chopped chives Paprika Fry potatoes and onions in a small amount of oil in a large frying pan until almost tender. Spread this mixture over bottom of a greased 13 inch by 9 inch casserole. Add salt and pepper to taste. Using the same frying pan, saute zucchini slices a few minutes, until tender-crisp. Layer zucchini on top of potatoes. Distribute cheese evenly over zucchini. Whisk together milk, eggs, mustard, salt and Worcestershire. Pour over potatoes, zucchini and cheese. Sprinkle parsley or chives and paprika generously over top. Bake at 375 degrees for 30 to 45 minutes, until eggs are set and lightly browned. Cut into squares and serve. Serves 8.
