Harvesting
Most nuts are harvested as soon as they ripen and fall to the ground. The outer husk must be removed soon after or the nut could become dark and moldy. The husks contain a good deal of dyeing matter which stains anything including hands, clothing, and pavements. Good leather gloves are best for handling, as the dye will bleed through cloth. The husks are not alway easily reused with mixed success. You can pound With a hammer. Some people find spreading them on a gravel driveway and driving over them words well.
When husks are removed the nuts should be allowed to cure for one to three months. Spreading them on a proch or shed roof is a good place, but a cage must be fashioned over them to keep out squirrels.
Cooking
Black walnuts have a stronger flavor than English walnuts. And some people may think that allthe effort to crack them and pick out the meat is not worth it.

You can also substitute black walnuts in other recipes using nuts like breads, cakes, even homemade ice cream. Just remember that the flavor is stronger then English walnuts or pecans, so you may want to reduce the quanity stated in recipe
