Last week the computer mail to our office brought an interesting feature on food safety regarding “takeout” turkey dinners since that seems to be the increasingly modem thing to do. It is the way some families of today are trying to have the traditional meal without the usual shopping and preparation. Complete holiday dinners are available from restaurants, caterers and supermarkets.

“As with home prepared turkey dinners, however, a safe take-out holiday meal depends on proper consumer handling of foods after the safely cooked dinner is picked up or delivered,” says Susan Conley, director of USDA's Meat and Poultry Hotline.

Calls to the Hotline indicated that some of the handling advice consumers were getting was unsafe. And questions about ready prepared turkeys were on the increase.

As a result of these concerns. Hotline food safety experts talked with food scientists in government and academia as well as allied health personnel, consumer advisers, consumer groups, grocery retailers, restaurant representatives and trade groups to develop some advice for keeping the take-out holiday meal safe. - I
