Cheesemaking beginners class set
On Saturday, March 18 Jordan River Farm on Jericho Road near Flint Hill will be having a cheesemaking class, “Kitchen Cheesemaking for Beginners.” The basics of kitchen cheesemaking will be covered, including soft and semi-soft cheeses made from Jordan River’s own Jersey milk. The basics of milk handling, storage and pasteurization will be covered as well as the ripening, renneting and pressing of semi-soft cheeses, and each student will taste and take home cheeses they create .The emphasis will be on simple, easy recipes that the student can try at home. The class runs from 10 a.m. until 4 p.m., and students who can arrive by 9:30 a.m. or stay until 4:30 have a chance to try milking a cow by hand.
The course is being conducted by Miriam S. Harris and C. L. “Cory" Koral, farm owners, who have been making their own dairy products at home for 20 years. Mrs. Harris has a cheesemaking certificate from the University of Guelph, Ontario, Canada. The cost of the class is $50.
Band Boosters to meet
