The raspberries have certainly enjoyed the warmth too. This is one of our most prolific crops of raspberries we have seen and eaten in a long time, which makes U-Picking a pure pleasure.
Picking a raspberry, in the warmth of the sun, surrounded by those pesky "no-seeums", sharing the space with bees, birds and roosters, once you taste that luscious berry, it makes it all worthwhile.
For a simple, delicious and easy dinner, saute an assortment of whole cherry tomatoes with olive oil and garlic (lots of garlic for those garlic lovers). As they cook, they will split open and produce an incredible tasting sauce to toss with your favorite pasta.
Garnish with fresh chopped basil, a good sharp Parmesan cheese, grated Manchego cheese or fresh goat cheese. Enjoy!
