"The traditional American Chardonnay is a heavily oaked wine, but we did not want to mask the wonderful flavors of our grape with a lot of oak. So in 2001 we broke with tradition and fermented our Chardonnay in stainless steel instead of oak. The wine was aged in neutral oak, to give it some body and a light oak flavor." she said.
